Steak Sandwiches

1 lb flat iron steak
salt and pepper
2 Tbl olive oil
1 onion, thinly sliced into strips
8 oz sliced mushrooms
8 Tbl prepared horseradish sauce
4 sub rolls

Heat a large skillet over medium high heat. Salt and pepper both sides of the flank steak and cook for 6-7 minutes per side. Remove to a cutting board and let rest. In the same pan, add the olive oil and onions. Sautee for 5 minutes, until golden, then add the mushrooms and sautee an additional 3-5 minutes. Thinly slice the flank steak against the grain. Cut open the sub rolls and spread each with 2 Tbl horseradish sauce. Top with the steak, and onion and mushroom mixture.
