4 (6 oz) salmon fillets
1/2 C plain breadcrumbs
1 C orange juice
2 Tbl horseradish
cooking spray
Preheat oven to 375. In a small nonstick skillet, toast breadcrumbs over medium heat, stirring often, until golden brown. Remove to a bowl and, mix breadcrumbs and horseradish until combined. Spread evenly on the top of the salmon fillets and press down to create a coating. Place salmon fillets skin side down in a greased 9 by 13 baking dish (coating side up) and carefully pour orange juice around salmon. Spray the top of each salmon fillet with cooking spray. Bake at 375 for 15 minutes until the fish will flake with a fork.
