Green Chile Cheeseburgers

Serves 4.

1 slice bread
1/4 cup milk
3/4 tsp salt
3/4 tsp ground black pepper
1/2 tsp garlic powder
1 1/3 lbs lean ground beef
vegetable oil (for grill grates)
1 (8 oz) can green chiles
4 slices deli white American cheese
4 kaiser rolls, split

Turn all grill burners to high, and heat until very hot, 15 minutes. Use grill brush to scarpe cooking grate clean. Lighty dip a wad of paper towls in vegetable oil; holding wad with tongs, wipe cooking grate until grates are black and shiny. Meanwhile, tear bread into chunks into the bowl of your stand mixer.  Add milk, salt, pepper, and garlic; mix until homogeneous. Add meat and mix on low speed until just combined. Divide meat into 4 equal portions. Form each into a 3/4 inch thick patty. Press the center of the burgers down to 1/2 inch, creating a slight depression in each patty. Grill burgers covered, until well seared, 4 minutes. Flip burgers and continue grilling, covered, 2 minutes on the second side. Distribute green chiles and cheese on burgers, and grill 2 more minutes, covered, until cheese is melted. While the cheese melts, toast the buns on the cooler side of the grill, rotating as necessary to toast evenly. Serve burgers on toasted buns.
