Whole Wheat Banana Muffins

1 cup unbleached all-purpose flour
3/4 cup granulated sugar
3/4 tsp baking soda
1/2 tsp table salt
3 very ripe bananas, mashed well
1/4 cup plain yogurt
2 large eggs, beaten lightly
6 Tbl unsalted butter, melted and cooled
1 tsp vanilla extract

Adjust oven rack to lower middle position and heat oven to 350. Grease a 12 cup muffin tin; set aside. Combine the first five ingredients together in a large bowl; set aside. Mix mashed bananas, yogurt, eggs, butter, and vanilla together in a medium bowl. Gently fold banana mixture into the dry ingredients just until combined. Divide evenly in the muffin tin; bake until muffins are golden brown and toothpick inserted into the center comes out clean, about 20 minutes. Cool in pan for 5 minutes, then transfer to wire rack. Serve warm.
