Oven Roasted Sweet Potatoes

1 pound sweet potatoes (1 large or 2 small), peeled, quartered lengthwise, and chopped into 1/2 inch pieces
1 Tbl canola oil
1/2 tsp salt
1/4 tsp pepper

Preheat oven to 425. Place sweet potatoes, oil, salt, and pepper in a large bowl and toss to coat thoroughly. Spread potatoes in an even layer on a cookie sheet coated with cooking spray. Bake for 30 minutes, stirring halfway through.
