Italian Toast and Eggs

4 thick slices crusty sourdough bread
1 Tbl extra virgin olive oil
1 garlic clove, peeled
1 cup marinara sauce, warmed
4 oz soft goat cheese
4 eggs
1 Tbl butter
salt and pepper
1 Tbl grated parmesan cheese
1 tsp dried basil

Put a 10-inch nonstick pan over low heat and heat for 5 minutes.  Meanwhile, preheat the broiler to "high" and set the rack on the highest position.  Brush both sides of the sourdough bread with the olive oil, and place under the broiler, turning after 1-2 minutes, until both sides are golden brown.  Place the bread on 4 serving plates, and rub the top of each with the garlic clove.  Discard leftover garlic.  Spread 1 ounce of the goat cheese on each slice, and top each with 1/4 cup marinara sauce.  Once the nonstick pan has heated, add the tablespoon of butter and let it melt, adjusting the heat so that it takes about a minute for the butter to fully melt.  Crack the 4 eggs into a bowl, and then slide all 4 at once into the heated pan.  Sprinkle with salt and pepper, cover, and cook for 2-3 minutes, until the whites are set and the yolks are cooked to taste.  Place one egg on top of each toast, and sprinkle with the parmesan cheese and basil.  Serve immediately.
