Bratwursts with Peppers and Onions

1 package (5-6 links) bratwurst or Italian turkey sausages
2 red bell peppers, seeded, and sliced into 1/4 inch strips
1 large yellow onion, peeled and sliced thin into 1/8 inch strips
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon vegetable oil
cooking spray
9 by 13 disposable foil roasting pan
Guilden's spicy brown mustard
deli rolls*

Turn all burners on your grill to high and heat with the lid down for 15 minutes.  Place the onion strips, salt, pepper, and vegetable oil in a large microwave safe bowl, cover with plastic wrap and cut a couple of slits to vent.  Microwave on high for 6 minutes, stirring halfway through.  Spray roasting pan with cooking spray and spread onions in an even layer on the bottom.  Toss in bell pepper strips.  Lay the sausage links evenly over the top.  Cover tightly with aluminum foil.  Place the entire roasting pan in the center of the grill, turn the heat down to medium and cook with the grill's lid down for 15 minutes.  Remove the foil lid and place the sausages directly onto the grill grate.  Stir the veggies and rotate the sausages every couple of minutes until they're well browned and marked with grill marks on all sides.  Serve immediately on deli rolls with spicy brown mustard.

*Serve 2 sausages topped with peppers, onions, and brown mustard; eat with a knife and fork for a low-carb meal.
