6 tablespoons unsalted butter, melted
2 tablespoons vegetable oil
1 cup (200 grams) sugar
2 eggs
1 tsp vanilla
1/3 cup (4 oz) chocolate chips plus 1 cup (6 oz) chocolate chips, divided
1/2 cup (60 grams) all-purpose flour
1/2 cup (50 grams) cocoa powder (preferably dutch processed)
3/4 teaspoon baking powder
1/4 tsp salt
1/2 cup chopped nuts (optional)
Preheat oven to 325. Grease an 8 inch square baking pan with cooking spray and line with parchment paper. In a large bowl, whisk butter, oil, sugar, eggs, and vanilla together extremely vigorously for 1 to 2 minutes. Melt the 1/3 cup of chocolate chips on high 1 to 2 minutes, stirring at 30 second intervals until melted. Whisk the chocolate into the sugar mixture until smooth. Fold in flour, cocoa powder, baking powder and salt, then remaining cup of chocolate chips and walnuts. Spread in the pan. Bake 30 minutes, then increase oven temperature to 350 and bake until a toothpick inserted halfway between the center and the edge comes out clean, about 8 to 10 minutes. Cool 30 minutes, then cut into squares and serve. Cover leftovers.
