Buttermilk Biscuits

2 cups unbleached all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon sugar
1/2 teaspoon salt
3 tablespoons buttermilk powder
1 stick cold unsalted butter, cut into 8 slices
3/4 cups cold water (or 3/4 cups cold buttermilk, omit the buttermilk powder)

Food Processor Method:
Heat oven to 450 with the rack in the middle position.  In the bowl of the food processor with the cutting blade, pulse flour, baking powder, baking soda, sugar, salt, and buttermilk powder until combined, 3-4 pulses.  Add the butter slices and pulse until it resembles coarse crumbs, 5-6 pulses.  Pour in the water and pulse until it forms a ball of dough, 3-4 pulses.  Turn the dough out onto a floured surface and pat into a 12 by 9 inch rectangle.  Cut into 12 even squares and arrange on a greased baking sheet.  Bake 10-12 minutes until golden brown, serve immediately.

By Hand Method:
Heat oven to 450 with the rack in the middle position.  In a large mixing bowl, whisk together flour, baking powder, baking soda, sugar, salt, and buttermilk powder until combined.  Add the butter slices and cut into flour mixture with a pastry cutter until it resembles coarse crumbs.  Pour in the water and stir with a spatula until it forms a ball of dough.  Turn the dough out onto a floured surface and pat into a 12 by 9 inch rectangle.  Cut into 12 even squares and arrange on a greased baking sheet.  Bake 10-12 minutes until golden brown, serve immediately.
