Ham and Gruyere Waffles

Serves 4

2 cups unbleached all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
2 eggs
4 tablespoons melted butter
1 1/2 cups buttermilk
1 cup shredded Guryere (or Swiss) cheese
1 cup Black Forest ham, cut into 1/8 inch dice
cooking spray
1 cup pure maple syrup
2 tablespoons butter


Whisk together melted butter, buttermilk, and eggs.  Add flour, salt, and baking soda and whisk just until combined.  Add up to 1/4 cup water as needed to give the batter a consistency where it will make a ribbon of batter off the whisk when you lift it up.  Stir in the cheese and ham.  Preheat your waffle iron, and preheat the oven to 250.  When the iron is hot, spray with cooking spray and ladle the batter in, being careful not to overfill the iron.  Cook until desired doneness is reached.  Place finished waffles directly on the center oven rack to stay warm and crisp until all waffles are finished.  Meanwhile, heat the maple syrup and remaining butter in the microwave on high for 30-60 seconds, watching carefully so it doesn't boil over.  Stir together and serve with the waffles.
