Barbecue Dry Rub

You can use this dry rub on chicken, pork chops, salmon, ribs... it's all delicious!

3 Tbl dark brown sugar
2 tsp chili powder
2 tsp paprika
1 1/2 tsp pepper
1 tsp dry mustard
1 tsp onion powder
1 tsp salt
pinch - 1/4 tsp cayenne pepper
3 lbs chicken, pork chops, salmon, or rib racks

Blot meat dry with paper towels, cover with a generous amount of rub and rub in.  Transfer meat to a plate and refrigerate 30 mins. to 1 hour before grilling.
