Garlic Green Beans

1 pound green beans, washed and trimmed
1/2 cup water
1/4 tsp salt
1 tablespoon unsalted butter
1 clove minced garlic
1/4 tsp red pepper flake

Add green beans, water, and salt to a large nonstick skillet.  Cover and place over medium high heat.  Let simmer 6 minutes, then uncover, turn heat to high, and boil, stirring occasionally, until all the water is gone.  Watch carefully.  As soon as the water is gone, add the butter, garlic and pepper flake and briefly stir fry until the butter is all melted, and the garlic and pepper flake become fragrant, about 1 minute.  Serve immediately.

You can also do this recipe with asparagus, sliced carrots (increase initial covered simmering time to 8 minutes) or with broccoli or cauliflower florets (decrease initial covered simmering time to 4 minutes).
