Smoked Salmon Mousse

This is an absolutely delicious spread. Great with crackers or raw veggies like carrots, celery, and endive. 

One 4-ounce package wild Alaskan smoked salmon
1 cup sour cream
1 teaspoon fresh lemon juice
3 tablespoons cold water
1 teaspoon unflavored gelatin

Place the water in a small bowl and sprinkle the gelatin over. Let it sit 3 minutes to absorb. Meanwhile, place the salmon, sour cream, and lemon juice in the bowl of your food processor and puree until smooth. Microwave the gelatin and water 20 seconds until dissolved. With the processor running, drizzle the gelatin through the feed tube and process 10 seconds to combine. Pour mixture into a bowl, cover, and refrigerate until thickened and spreadable, 2 hours.
