1 cup long grain white rice
2 cups low sodium chicken broth (or vegetable broth)
1 teaspoon dried cilantro
1/2 onion powder
zest of 1 lime
1 tablespoon juice from 1 lime
Add rice, broth, cilantro, onion powder, and lime zest to a medium saucepan and bring to a boil over medium high heat. Reduce heat to medium and simmer until the water is almost down to the surface of the rice. Cover and reduce heat to low. Cook 15 minutes. Remove pot from heat, keep covered, and let sit 5 more minutes. Add lime juice and fluff with a fork. Serve.
