Parmesan Halibut

1/4 cup milk
1 egg
1 cup parmesan cheese, grated
1/2 cup flour
1 teaspoon ground black pepper
1/2 teaspoon salt
1 tablespoon paprika
4 (6 oz) halibut fillets
3 tablespoons butter, cut into small pieces
Lemon wedges, for serving

Heat oven to 475°. Set a wire rack over a baking sheet and spray with cooking spray. In a small bowl, lightly beat egg and milk together. In a separate bowl, stir together parmesan cheese, flour, paprika, pepper and salt. Dip fish fillets in egg wash, and then dredge in flour mixture. Lay fish fillets in a single layer on wire rack over baking sheet. Top with dabs of butter and bake for 8-10 minutes, or until crispy and baked through. Serve with lemon wedges.
