Granola

1/3 cup real maple syrup
1/3 cup brown sugar
3/4 teaspoon salt
1/4 teaspoon cinnamon 
1 tablespoon vanilla
1/2 cup vegetable oil
5 cups old fashioned oats
1 1/2 cups sliced almonds, or other nuts/ seeds of choice
1 1/2 cups dried fruit

Heat the oven to 325, and line a baking sheet with parchment paper. Whisk together sugar, syrup, salt, vanilla, and oil, then fold in oats and nuts. Spread on the baking sheet and pack down into a compressed, even layer. Bake 30-40 minutes, rotating halfway through, until nuts look lightly toasted and granola smells fragrant. Cool 30 minutes, then break into small pieces, and stir in dried fruit. Store in an airtight container up to 2 weeks.
