Apple Walnut Gorgonzola Galette

Crust:
1 1/4 cups unbleached all purpose flour
1/2 teaspoon salt
1 tablespoon sugar
10 tablespoons cold unsalted butter, cut into tablespoons 
3 tablespoons ice water

Apples:
3 Granny Smith apples
2 tablespoons sugar
1 tablespoon apple cider vinegar
2 tablespoons chopped walnuts
2 tablespoons crumbled Gorgonzola cheese

Heat oven to 400 with the rack in the middle position. Place flour, salt, and sugar in a food processor and pulse to combine. Sprinkle butter over and pulse 10 times. Pour water over and run until it forms a ball of dough. Turn out onto a floured counter and roll out into a 12 inch circle. 

Peel, core, halve, and thinly slice the apples. Toss in a bowl with the sugar and vinegar. Mark a 10 inch circle in the center of the dough and shingle the apple slices from the outside edge to the center. Sprinkle nits and Gorgonzola over the top. Fold the edges of the pie crust up over the edge of the filling. Slide tart onto a baking sheet and bake 45 minutes until golden brown. Cool before serving.
