Cheesesteak Sandwiches

1 1/2 pounds flat iron steak
1 large shallot
6 slices Swiss cheese
6 hoagie rolls
Mayonnaise 
Salt and pepper
1 tablespoon vegetable oil

Place the steak in the freezer for 45 minutes until very cold and firm. Place the slicing disk on your food processor and thinly slice the shallot. Remove to a small bowl and set aside. Cut the steak into pieces short enough to fit in the mouth of the food processor. Slice the steak with the slicing disk into very thin strips. 

Heat the vegetable oil on medium high heat and add the shallot. Cook until golden brown, 5-8 minutes. Add the steak and sprinkle the surface with salt and pepper. Stir and cook until no pink remains. Taste and add more salt and pepper as needed. Remove from heat and cover to keep warm.

Heat broiler to high with the rack in the top middle position. Open hoagie rolls and place on a baking sheet. Place Swiss cheese on one side of the rolls. Broil until cheese is melted and bread is toasted, 1 minute, watching carefully. Spread mayonnaise on the toasted side of the roll and spoon meat into the roll. Serve.
