Spinach Squares

1 cup unbleached all purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1 cup low sodium chicken or vegetable broth
3 large eggs
2 (10 oz) packages frozen spinach, thawed and squeezed dry
8 oz (2 cups) shredded gruyere cheese
4 oz (1 cup) shredded cheddar cheese
1 oz (1/2 cup) grated Parmesan cheese

Heat oven to 375. Grease a 9 by 13 pan with cooking spray. In a large bowl, whisk flour, baking powder, salt, pepper, and cayenne. Whisk in broth and eggs until smooth. Stir in spinach, gruyere, and cheddar, and spread in the pan. Sprinkle with the Parmesan cheese and bake until golden browned, 40-45 minutes. Cool in the pan 20 minutes, then cut into squares. Serve warm or at room temperature. Refrigerate leftovers.
