Chicken Taco Soup

2 cups shredded cooked chicken
1 cup frozen corn kernels
1 can black beans, drained and rinsed
1 tablespoon minced fresh cilantro
1 1/2 cups low sodium chicken broth
1 can diced tomatoes
1 tablespoon taco seasoning
1 rib celery
1 carrot
1/4 of a small yellow onion
Salt and pepper

Toppings, as desired:
Crushed tortilla chips
Shredded cheddar cheese
Sour cream
Diced avocado
Diced tomato
Diced red onion
Lime wedges

Place shredded chicken, corn, 1 cup of the black beans, and cilantro in a large bowl. Cover and microwave until hot, 1-2 minutes, set aside.

Place broth, remaining black beans, tomatoes, taco seasoning, celery, and carrot in vitamix and blend until hot, 6 minutes. Pour soup over chicken mixture and stir to combine. Ladle into bowls and top with garnishes. Serve.
