Cream of Vegetable Soup

2 cups low sodium chicken broth
2 cups cooked vegetable*
1 shallot or 1/4 onion 
Salt and pepper
1/4 cup cream

Place broth, vegetable, and onion in vitamix blender and purée until smooth and hot, 6 minutes. Stir in cream, and salt and pepper to taste.

Vegetable choices: broccoli, cauliflower, peas, spinach, potatoes, sweet potatoes, winter squash, carrots, black beans
For a cheese soup, add 1/2 cup shredded cheddar cheese with the vegetables and omit the cream.
