Honey Muffins

Great for breakfast with scrambled eggs and bacon, or as a sweet dinner roll alternative. 

2 cups all-purpose flour
½ cup granulated sugar
1 tablespoon baking powder
½ teaspoon salt
1 cup milk
¼ cup unsalted butter, melted
¼ cup honey
1 egg

1. Preheat oven to 400 degrees F. Line a 12-cup muffin tin with paper liners or spray with a non-stick cooking spray.

2. In a large bowl, whisk together the flour, sugar, baking powder and salt.

3. In a medium bowl, whisk together the milk, butter, honey and egg. 

4. Pour the wet ingredients into the dry ingredients and, using a rubber spatula, fold together until no dry ingredients remain. 

5. Divide the batter evenly between the muffin cups. Bake for 12 to 15 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 5 minutes, then remove to a wire rack. Serve warm or at room temperature.
