Baba Ghanoush

1 eggplant
2 cloves garlic, unpeeled
Juice of one lemon
1/4 cup sesame seeds
3/4 teaspoon salt
1/4 cup extra virgin olive oil 

Heat oven to 400 degrees. Pierce the eggplant in a few places with a sharp knife and place on a foil lined baking sheet. Bake for 40 minutes. Halfway through baking, turn the eggplant and add the garlic cloves to the baking sheet. Let the eggplant and garlic cool, 20 minutes. 

Peel the garlic and eggplant (the peel should pull easily away with your fingers) and place in the vitamix with all the remaining ingredients. Blend 1 minute, until smooth. Keep refrigerated in an airtight container until ready to serve. 

Great with pita chips, crostini, and raw vegetables.
