Roasted Tomato and Garlic Sauce

6 Roma tomatoes, quartered
2 cloves garlic, unpeeled
1 tablespoon extra virgin olive oil
1/2 teaspoon dried oregano
1/4 teaspoon red pepper flake
Salt and pepper

Heat oven to 400 degrees. Line a rimmed baking sheet with parchment paper. Toss tomatoes, garlic, oil, oregano, pepper flakes, and 1/4 teaspoon salt together and spread evenly on the baking sheet. Roast 20 minutes. 

Carefully peel the garlic and discard the peel - the peel should easily slip off. Scrape the mixture into the center of the parchment, carefully lift the edges of the parchment and funnel it into a blender or food processor. Pulse to your desired smoothness. Taste and add salt and pepper as needed.
