Traeger Smoked Chicken

2 quarts water
1/4 cup salt
1/4 cup sugar
traeger chicken seasoning
1 whole chicken (5 lbs)

In a large bowl, stir together water, salt, and sugar until dissolved. Add the chicken and brine for 1 hour.

Turn grill to smoke. Once smoking heavily, about 3 minutes, pat the chicken dry and place on the grill.  Close the lid and smoke 1 hour.

Increase heat to 275 and cook 1 1/2 hours.

Increase heat to high and cook 15-30 minutes longer, until breast meat registers 160F.

Rest on a cutting board 20 minutes, then slice and serve.
