2 teaspoons Dijon mustard
1/2 teaspoons lemon zest plus 1 teaspoon juice

Garlic Anchovy Butter
1 teaspoon red wine vinegar
1/4 teaspoon garlic, minced to paste
3 tablespoons butter, soft
1 tablespoon chopped fresh parsley
1 anchovy fillet, rinsed and minced to paste

Sriracha Lime Butter
3 tablespoons butter, soft
1 tablespoon chopped fresh cilantro
1 tablespoon sriracha sauce
1/2 teaspoon lime zest plus 1 teaspoon juice
