Martha Stewart's Meatloaf

3 slices white bread
2 lbs ground beef
1/2 yellow onion, peeled and cut into quarters
2 cloves garlic
1 green bell pepper, seeded and cut into quarters
1 large carrot, cut into quarters
1/2 cup parsley leaves
1 large egg
1 cup ketchup, divided
3 teaspoons dry mustard, divided
1 1/2 teaspoons salt
1 teaspoon pepper
2 tablespoons brown sugar

Heat oven to 375 degrees. Line a loaf pan with plastic wrap and line a rimmed baking sheet with parchment paper. Place bread in the bowl of a food processor and pulse until fine bread crumbs form.  Place in a large mixing bowl.  Place onion, garlic, bell pepper, carrot, and parsley in the food processor and pulse until finely ground, scraping down the sides of the bowl as needed.  Add to the mixing bowl with the bread crumbs. Add meat, egg, 1/2 cup ketchup, 2 teaspoons dry mustard, salt, and pepper; use hands to combine thoroughly.  Press mixture into the plastic wrap lined loaf pan.  Turn the loaf pan upside down onto the baking sheet and lift the pan off.  Remove the plastic wrap.  Whisk together the remaining 1/2 cup ketchup, remaining 1 teaspoon dry mustard, and the brown sugar.  Glaze the entire surface of the meatloaf.  Bake 90 minutes.  Let rest 10 minutes before slicing.
