1 (5 lb) chicken, giblets removed
2 quarts water
1/2 cup salt
1/2 cup sugar
2 tablespoons spade L ranch chicken seasoning
Stir water, salt, and sugar together until dissolved in a very large bowl. Add chicken and let brine 1 1/2 hours.
Drain chicken and pat dry. Rub chicken seasoning under the skin and all over the outside of the chicken.
Turn traeger grill to "smoke" with the lid open until it starts smoking heavily. Turn to 250, close the lid, and let heat 10 minutes. Scrape down the grates and place the chicken, breast side up on the grill. Close the lid and cook 1 1/2 hours.
Turn grill to "high" and cook 30 more minutes. Add whole russet or sweet potatoes at this time, if desired.
Let chicken rest on a cutting board while potatoes finish cooking, 30 more minutes. Carve and serve.
