Chocolate Chip Peanut Butter Cookies

1 1/2 sticks unsalted butter, room temperature
1/2 cup creamy peanut butter
1/2 cup (3 1/2 oz) granulated sugar
1/2 cup packed (3 1/2 oz) brown sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups (7 1/2 oz) unbleached all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 cups chocolate chips

Heat oven to 350. Line 2 baking sheets with parchment.

Add butter, peanut butter, and sugars to your mixer with the paddle attachment, and beat on medium speed for 2 minutes. Scrape down the bowl.

Add the egg and vanilla, and beat just until incorporated. Add the flour, baking soda, cinnamon, and salt, and beat on low to combine. Fold in chocolate chips with a spatula.

Scoop 12 cookies on each baking sheet. Bake one sheet at a time on the middle rack for 8 to 13 minutes, until they look puffed but no longer wet, and are lightly browned on the bottom.
