Polenta in the Microwave

1 cup stone ground cornmeal
3 1/2 cups water
1 teaspoon salt
2 tablespoons unsalted butter
2 ounces grated parmigiano reggiano cheese
Black pepper

Whisk cornmeal, water, and salt together in a very large microwave safe bowl. Cover and microwave on high for 6 minutes. Uncover and whisk thoroughly.

Microwave 5 more minutes until very thick. Whisk in the butter, cheese, and pepper to taste. Serve.
