1 tablespoon olive oil
1/2 onion, diced fine
1 clove garlic, minced
2 cups low sodium vegetable broth
1 cup green or brown lentils, rinsed well
Heat olive oil on the saute setting. Add onion and garlic, and cook until softened, 5 minutes. Add broth and lentils. Turn off saute, and add the lid. Set to high pressure for 15 minutes. Let the pressure naturally release for 15 minutes, then release any remaining pressure.
Serve over cooked whole grains, like brown rice, quinoa, farro, etc.
For lentil tacos: mix with taco seasoning, and serve on corn tortillas with salsa and avocado
For lentil sloppy joes: drain them and mix with sloppy joe sauce. Serve on whole grain buns
For lentil curry: stir in 1 can light coconut milk and 1 teaspoon curry powder
