Red Lentil Bulgur Soup

1 tablespoon olive oil
1 onion, diced
2 carrots, peeled and diced
3 garlic cloves, minced
1/2 teaspoon salt
1 teaspoon caraway seeds
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
6 cups vegetable broth
1 cup red lentils
1/2 cup bulgur
2 tablespoons tomato paste
1 bay leaf

Heat olive oil on the saute setting of your pressure cooker. Add onion, carrots, garlic, and salt, and saute to soften, 5 to 8 minutes. Add spices, and cook 1 minute. Add broth, lentils, bulgur, tomato paste, and bay leaf. Stir well to combine.

Switch off saute mode. Add the lid with the valve set to sealing, and cook on high pressure for 10 minutes. Instant release the pressure, remove the bay leaf, and serve.
