Sheet Pan Ratatouille

1 eggplant, diced into 1/2 inch dice
2 zucchini, diced into 1/2 inch dice
1 pint grape or cherry tomatoes, halved
1 shallot, thinly sliced
1/4 teaspoon each salt and pepper

Heat oven to 425. Toss everything together and spread on a parchment lined baking sheet. Bake 20 minutes. Sprinkle with fresh minced basil, and serve.
