Whole Wheat Pancakes

1 1/4 cups whole wheat flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon vegetable oil
1 1/4 cups sparkling water 

Heat a nonstick skillet over medium heat. Mix dry ingredients in a bowl. Quickly mix in wet ingredients. Ladle pancakes into skillet with a 1/4 cup measuring cup. Cook until first side is browned, then flip and cook until second side is browned. Serve.

Makes 7 to 8 pancakes.
