Apple Carrot Muffins

Makes 7-9 muffins

3/4 cup (87 grams) unbleached all purpose flour
3/4 cup (87 grams) whole wheat flour
1/3 cup (75 grams) sugar
1 tsp baking soda
1 tsp pumpkin pie spice
1/4 teaspoon salt
2 eggs
1 (4 ounce) jar carrot baby food
1 apple, shredded on the large holes of a box grater

Heat oven to 375. Line a muffin tin with 9 liners. Whisk together all dry ingredients. Add eggs and baby food and stir until just combined. Fold in shredded apple. Scoop into lined muffin tin, removing any extra liners. Bake 20-25 minutes until golden brown and firm on top. Cool 10 minutes before serving.
