1 tablespoons ghee or olive oil
½ onion, chopped fine
1 stalk celery, chopped fine
1/2 teaspoon salt
1/2 teaspoon pepper
1 garlic clove, minced
1/2 teaspoon dried thyme
2 tablespoons Worcestershire sauce
3 tablespoons quick oats
2 teaspoons cornstarch
1 large egg
2 tablespoons dijon mustard
1 1/2 pounds 93 percent lean ground turkey
⅓ cup chopped fresh parsley
GLAZE
1 cup ketchup
¼ cup packed brown sugar
2 ½ teaspoons cider vinegar
½ teaspoon sriracha sauce
Heat ghee or olive oil in a nonstick skillet over medium high heat. Add onion, celery, garlic, salt, pepper, and thyme, and cook until softened, 8 to 10 minutes. Add to a large bowl.
Add all remaining meatloaf ingredients and mix together well. Line a sheet pan with foil, spray with cooking spray, and add the meatloaf mixture, forming it into a loaf shape.
Whisk glaze ingredients together. Spread 1/3 of glaze onto meatloaf. Bake at 350 for 60 minutes, until meatloaf registers 160 degrees in the center. Serve, passing extra glaze at the table.
