Pumpkin Chocolate Chip Cookies

12 tablespoons unsalted butter, melted
1 cup packed brown sugar
1/2 cup granulated sugar
1 (12 oz) can pure pumpkin puree
1 teaspoon vanilla
2 1/2 cups unbleached all purpose flour
3/4 teaspoon pumpkin pie spice
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup semisweet chocolate chips

Heat oven to 350. Line 2 baking sheets with parchment paper.

In a mixing bowl, beat butter and sugars on medium speed for 2 minutes. Add pumpkin puree and vanilla and beat until combined.

Mix flour, pumpkin pie spice, salt, and baking soda together and add to pumpkin mixture. Mix just until combined. Fold in chocolate chips.

Scoop with a medium cookie scoop to form 24 cookies; 12 per cookie sheet. Bake one sheet at a time on the middle rack for 12 to 16 minutes until very lightly golden brown around the bottom edges. Let cool 10 minutes before serving.
