Frosted Sugar Cookies

Cookies:
2 sticks butter, room temperature 
1 cup (7 oz) sugar
1 1/2 tsp baking powder 
3/4 tsp salt
1 egg
2 Tbl (1 oz) milk
1 tsp vanilla extract 
2 3/4 cups (11 oz) cake flour 

Frosting:
2 sticks butter, room temperature 
2 cups (8 oz) powdered sugar 
Pinch salt
2 Tbl milk
1 tsp vanilla
Food dye
Sprinkles 

Heat oven to 350. Line 2 baking sheets with parchment. Add butter, sugar, baking powder, and salt to mixing bowl with the paddle attachment. Beat on speed 6 for 5 minutes. Scrape down the bowl and add milk and egg. Beat until combined, then scrape down the bowl and add flour. Beat on low until combined.

Use a medium size cookie scoop to make 24 cookies, 12 on each cookie sheet. Bake 15 minutes, until very lightly golden brown around the edges. Remove to a wire rack to cool.

Meanwhile, wash out the mixing bowl and add the butter for the frosting. Beat with the paddle attachment on speed 6 for 3 minutes. Scrape down the bowl. Add the powdered sugar and salt and beat on low speed, slowly increasing to speed 6. Beat 3 minutes. Scrape down the bowl. Add the milk and vanilla and beat starting on low speed, slowly increasing to speed 6. Beat 30 seconds. Scrape the frosting into separate bowls and add food coloring as desired. Frost the cooled cookies and add sprinkles.
