Mini Frittatas

8 large eggs
2 tablespoons milk or cream
1/2 teaspoon kosher salt
1/4 teaspoon pepper 
1/2 cup shredded cheese, any variety 
1/2 cup chopped cooked ham, bacon, or sausage
1/4 cup chopped sauteed vegetables of your choice (like onions, mushrooms, bell peppers, broccoli, etc)

Heat oven to 350. Spray a 12 cup silicone muffin pan with cooking spray and set on a baking sheet for stability.

Whisk eggs, milk or cream, salt, and pepper together in a large bowl. Stir in the meat, cheese, and veggies. Use a 1/4 cup measuring cup to divide the mixture evenly between the muffin cups.

Bake 20 minutes until puffed and set. Let cool 5 minutes, then remove from the muffin pan to a serving platter.

Excellent with fresh fruit and toast.
