8 tomatillos
1/2 small white onion
1 serrano or jalapeno pepper
1/4 cup fresh cilantro leaves
Salt
Peel the husks off the tomatillos and rinse off the sticky residue on the surface. Cut the tomatillos into quarters.
Arrange half the tomatillo quarters on a baking sheet lined with foil and sprayed with cooking spray. Broil until spotty brown, 5 to 10 minutes, watching carefully. Place the broiled tomatillos, raw tomatillos, onion, jalapeno or serrano pepper, and cilantro in a food processor and pulse, scraping down the sides occasionally, until the desired texture is achieved. Taste and add salt to taste. Refrigerate until ready to serve.
