Marinated Zucchini

2 zucchini, halved long ways
3 tablespoons olive oil, divided
3 green onions, minced
1 1/2 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon pepper

Heat 1 tablespoon oil in a skillet over medium high heat. Add zucchini and cook about 4 minutes per side until spotty browned. Slice crosswise into 1/2 inch slices. Add to a bowl with the remaining oil, onions, lemon juice, salt, and pepper and toss to coat well. Cover and let sit at room temperature for at least an hour before serving.
