Crispy Baked Tacos

12 corn and/or small flour tortillas
Refried beans (optional)
Salsa - any variety 
2 cups shredded cheddar jack cheese
2 cups taco meat, or shredded chicken, or grilled chicken or steak strips, or shredded sweet pork, or grilled shrimp, or grilled fish, etc.
Optional toppings: diced avocado, diced tomatoes, shredded lettuce, more salsa, sour cream, etc.

Heat oven to 425 with the rack in the lowest position.

Spray 2 baking sheets with cooking spray and lay out 6 tortillas on each sheet.

Spread a thin layer of refried beans on each tortilla (if using).

Spread a tablespoon of salsa on each tortilla.

Divide cheese evenly among tortillas.

Divide meat evenly among tortillas.

Bake 1 tray at a time for 7 to 9 minutes until tortillas are getting browned and crispy on the bottom and cheese is all melted.

Quickly fold the tacos and serve with toppings.
