Slow Cooker Meatloaf with Potatoes

2 lbs ground beef
2 eggs
1 small onion, finely chopped
1/3 cup ketchup, plus extra for glazing 
1/4 cup milk
1/4 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper
25 saltine crackers, crushed 
3 to 5 large Yukon gold potatoes, scrubbed well

Mix all ingredients except for potatoes until well combined. Turn out onto a piece of greased tin foil and shape into a loaf that's tall enough to fit in the slow cooker with room for potatoes around the edge. Use the tin foil as a sling and lower into a large oval slow cooker. 

Wrap the potatoes in foil and add around the edges of the slow cooker. It's OK if the potatoes touch the edges of the meatloaf. Brush the meatloaf with extra ketchup as desired. 

Cover and set to low for 6 to 8 hours.

Remove the potatoes, then use the foil sling to lift out the meatloaf and place on a carving board.

Serve the meatloaf with the potatoes.
