Apple Butter

2 apples, cored and cut into chunks 
1/4 cup sugar 
1/2 teaspoon penzeys pie spice 

Place the apple chunks into the vitamix blender and blend, using the tamper, until a smooth puree forms. Scrape out into a saucepan. Add the sugar and pie spice and cook over medium high heat, stirring with the spatula, until rhickendd and darkened. Pour into a heat proof jar and let cool. Refrigerate to cool completely.
