Plum Torte

1 cup (5 ounces) unbleached all purpose flour
3/4 cup (5 ounces) sugar
1/2 teaspoon baking powder
Pinch salt
1 stick unsalted butter, soft, cut into 8 pieces
2 eggs
1 teaspoon vanilla
8 to 12 plums, halved and pitted

Heat oven to 350. Combine flour, sugar, baking powder, and salt in the mixer bowl with the paddle attachment. On medium low speed, drop in the butter 1 piece at a time. Mix until butter pieces are small like peas. Whisk eggs and vanilla together in a spouted measuring cup. Pour in a steady stream into the flour mixture. Increase speed to medium high and beat 1 minute. Batter will be thick.

Spread the batter in a greased 8-inch round cake pan. Place plum halves in an even layer over the surface of the cake. They should be one single layer but tightly packed together.

Bake 40 to 50 minutes until a toothpick or cake tester comes out clean. Cool 15 minutes, then turn out onto a wire rack to cool completely.
