Spaetzle

2 cups all-purpose flour 
3/4 teaspoon salt
1/4 teaspoon ground nutmeg
3/4 cup whole milk
3 eggs

Stir flour, salt, and nutmeg together in a bowl. Whisk milk and egg together in a small bowl then pour into the flour mixture. Stir together until smooth. Cover and set aside for 20 minutes.

Meanwhile, bring 4 quarts of water to boil in a large pot. Spray your spaetzle maker with cooking spray and set over the pot. Add half the spaetzle dough and scrape it through the holes into the boiling water. Let it boil 1 minute, then use a slotted skimmer to remove the spaetzles to a bowl. Repeat with the 2nd half of the dough. Stir in 1 tablespoon butter until melted and serve.
