Soft Gingerbread Cookies

1 1/2 sticks unsalted butter, room temperature 
1 cup (7 oz) sugar
1/4 cup molasses 
1 egg
1 tablespoon water
2 1/4 cups (11.2 oz) flour
2 teaspoons ground ginger
1 teaspoon baking soda
3/4 teaspoon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
1/4 cup sugar for rolling 

Heat oven to 350. Line 2 baking sheets with parchment paper.

In mixer bowl, beat butter and sugar on medium high until fluffy, 1 to 2 minutes. Add molasses, egg, and water and beat until combined. Scrape down the bowl and add flour, ginger, baking powder, salt, cinnamon, cloves, and salt. Mix in until combined. Scoop into 24 cookies. Roll each into a ball, then roll in the sugar and place on the baking sheets. Bake at 350 8 to 10 minutes until just golden around the bottom edge.
