Canned Pie Filling

12 cups fruit, sliced and peeled as desired
3 1/2 cups sugar
2 1/2 cups water
1/2 tsp cinnamon
3/4 cups lemon juice
1 cup EZ gel

Bring sugar, water, cinnamon, and lemon juice to a boil, whisking until sugar is dissolved. While whisking constantly, slowly pour in the EZ gel. Keep whisking until boiling, smooth, and thickened. Stir in the fruit and cook another couple of minutes so the fruit releases its juices and mixture gets a bit looser. 

Spoon into clean, sterilized quart canning jars, leaving a half inch head space. Add lids and sealing rings fingertip tight. Add jars to boiling water canner and process 30 minutes, adjusting for altitude as necessary).
