2 cups all purpose flour
3/4 tsp salt, plus more salt for the cooking water
1/2 tsp pepper
Pinch grated nutmeg
3/4 cup milk
3 eggs
1/4 cup cottage cheese
Whisk the flour, salt, pepper, and nutmeg together in a bowl. Whisk the milk and eggs together to combine, then pour into the flour mixture and fold together with a spatula to form a thick batter.
Place the cottage cheese in a serving bowl and set aside.
Let the batter rest while you bring a pot of salted water to a boil.
Place a spaetzle maker over the pot. Drop about 1/4 of the batter onto the spaetzle maker and scrape the batter through the holes. Remove the spaetzle maker to a plate and let the spaetzle cook about 1 minute. Use a skimmer tool to remove the spaetzle from the water and place in the serving bowl with the cottage cheese.
Place the spaetzle maker back over the pot and repeat the process with the remaining batter.
Fold the noodles and cottage cheese together and serve.
