2 cups instant mashed potato flakes (unflavored)
1 cup all purpose flour
1 1/2 teaspoons salt
1 1/2 cups water
1 egg
Whisk potato flakes, flour, and salt together in a large bowl. Whisk water and egg together in a liquid measuring cup. Pour into the potato mixture. Stir together with a spatula until a ball of dough forms. Cover and let sit to hydrate for 5 minutes.
Bring a large pot of salted water to a boil. Have a spider skimmer and a large skillet with warmed sauce of your choice standing by.
Turn the dough ball out onto a floured counter and knead, adding more flour as needed, until the dough is no longer sticky and feels like play-doh. Cut the ball into 3 pieces. One at a time, roll each into a 3/4 inch rope. Use a bench scraper or knife to cut into 1/2 inch pieces. Place pieces on a well floured rimmed baking sheet and toss in the flour to coat the pieces so they're not sticky.
Once all the gnocchi are made, cook in the water in batches. Load up the spider with as many as will fit, lower them into the water and stir occasionally. Once the gnocchi float, scoop them out with the skimmer and put them in the skillet of saice. Repeat with the remaining gnocchi.
Stir the gnocchi into the sauce to coat and serve.
